Easiest Vegetarian Chili

What will you need?


1 onion

2 garlic cloves peeled and sliced

3 red/yellow peppers but into stripes

Frozen corn (I like Trader Joe’s organic corn)

2 cans of beans (I like light and dark kidney beans)

Tomato paste tube

Salt

Chili seasoning


What do you need to do?


Cut the onion into cubes and cook until translucence.

Add the garlic and cook for 2 more minutes.

Add the peppers and cook for 2-3 more minutes.

Add a little corn and the beans

Add the tomato paste and water to dilute it until it covers well everything.

Bring to a low boil, then add the chili seasoning and salt to taste. Then, cover the pot and reduce the heat (low - medium low) to gently simmer the chili, for about 30 minutes.


Enjoy as is or with rice.
